Maple Taffy Recipe from Maple Syrup Trees

Canada's famous and iconic Maple syrup is made from the sap of maple trees each spring. Maple trees store starch in their trunks and roots before winter, this starch is then converted to sugar that rises in the sap in late winter and early spring. Maple trees are tapped by drilling holes into their trunks and collecting the sap. The sap is processed by heating to evaporate much of the water, leaving the concentrated syrup. Therefore, a famous condiment for pancakes, Maple syrup has plenty of uses, and a favourite is Maple Taffy.
